In various news sources today, a white Wine that is as healthy as Red Wine has been developed by scientists in Israel. http://www.telegraph.co.uk/news/2177429/White-Wine-with-health-benefits-developed.html 'The Israeli Wine contains enhanced levels of plant chemicals which are believed to fight heart disease. Researchers from Technion, the Israeli Institute of Technology, found that they were able to fortify white Wine with health-giving polyphenol compounds. Red Wine is naturally fortified with the compounds, which are concentrated in grape skins. The fermentation process releases the polyphenols, giving Red Wine its colour and its Antioxidant properties. White Wine is not made with grape skins and therefore lacks polyphenols. But scientists at Technion discovered that they could boost white Wine polyphenols six-fold, by incubating squeezed grapes in the presence of alcohol for 18 hours, before removing their skins. The technique produces Wine that looks and tastes the same as regular white Wine but has the same Antioxidant activity as Red Wine. Israeli Wine manufacturer Binyamina has begun using the recipe to manufacture the new healthier white Wine, which is expected to go on sale in the US by the end of the year. You've heard of the French paradox -- Red Wine apparently helps keep the arteries clear despite all those cream sauces and buttery croissants. But how about the Asian paradox? The term was coined in 2006 by Yale researchers to explain the low rates of heart disease and cancer in countries with high rates of cigarette smoking. One theory: The average 1.2 liters of green tea consumed daily by many people in Asia offers Antioxidant protection. (Not an excuse for sipping a cup of green tea during your cigarette break and calling it even.) Green tea is green because the leaves of Camellia sinensis are not allowed to ferment. It also contains the highest concentration of powerful antioxidants called polyphenols. For your health, green tea is reputedly golden. The Mayo Clinic Web site lists 17 "uses based on scientific evidence" for green tea -- and rates all of them as a C, meaning the scientific evidence is unclear for the claim. According to the Arizona Republic , these are the ingredients for a more youthful appearance, and restaurants are jumping on the trend by offering Antioxidant-rich dishes. Annika Stensson, spokeswoman for the National Restaurant Association, said the association recently conducted a survey asking more than 1,200 professional chefs in the United States to list the trendiest items on their menus. Many people ask the basic question: what is distinctive about Red Wine and why do you prefer it over white? Well let’s begin with the basics of what distinguishes a Red Wine. Red Wine has to be Red, of course, but Red Wine also includes wines that are purple Red, ruby Red or pale brick Red in color. The colour in Red Wine comes from the skins. Compounds called tannins are unique to Red Wine. Tannins are a group of natural compounds found in grape skins. Tannins are an excellent Antioxidant and preservative which also provide Red Wine with its structure, texture and aspects of flavor. To get a sense of what tannins taste like, take a tea bag and steep it for a long time in a cup and take a sip. You will notice your lips start to really pucker. Not all Red wines make your lips pucker but Red wines really high in tannin do. By trying this simple exercise you’ll get a sense of what sensation tannins produce and in turn be able to pick up on the more subtle tannins in varieties of Red Wine. What I really love about Red Wine is that there are many more flavours and nuances of Red Wine than exist with white. These subtle flavours and nuances are referred to as complexity.
