If you thought you were eating mostly grass-fed beef when you bit into a Big Mac, think again: The bulk of a fast-food hamburger from McDonald's, Burger King or Wendy's is made from cows that eat primarily corn, or so says a new study of the chemical composition of more than 480 fast-food burgers from across the nation. When money's tight, the world goes to McDonald's for a dollar burger, and maybe a splurge on Southern-style chicken, an opportunity to win big -- or small, that next package of French Fries has to come from somewhere -- with the chain's traditional 'Monopoly' game. Same-store sales were up 8.2% worldwide , with a respectable 5.3% increase in U.S. outlets. McDonald's Corporation (NYSE: MCD ) is still struggling to gain Wall Street approval for many of its recent moves, such as expanding hours and diving head-first into competition with Starbucks, rolling out espresso bars and fancy blended coffee drinks into its U.S. stores. Given some rough numbers from Starbucks (NASDAQ: SBUX ) out yesterday, it seems reasonable to wonder whether customers are avoiding the pricey pastries and coffee drinks at Starbucks and heading for the Dollar Menu at McDonald's. We've encountered a style of hamburger cookery in the Midwest that we rarely see in the East. Many of these places use fresh, coarsely-ground beef and smoosh it down hard on the cooktop, resulting in a thin, irregularly-formed patty with crisp edges and the chaw of real beef which hasn't been pulverized to a pulpy paste. The Kansas City chain Winstead's makes such a burger. The burgers are not large; we recommend ordering them in at least the double configuration (with grilled onions, please) for proper burger balance. The standard works garnish also includes mustard, ketchup, and pickles. On the side, French Fries and fun-greasy onion rings are available. To drink, get that wonderfully refreshing Midwest treat, a limeade (which is carbonated, unlike lemonade). This is a sit-down place, steps from Country Club Plaza, with waitress service, but priced like your local McDonald's. It feels less like a fast-food chain, though, than a soda fountain (the ice cream sodas and shakes are very popular) crossed with a luncheonette/diner. The chain has changed hands and is now part of a local restaurant conglomerate. Such a situation makes us wary but, unlike old legendary in-name-only relics like, say, Lindy's and Nedick's in New York City, for instance, with Winstead's there actually still seems to be a "there" there. ...

The study is published in the journal Proceedings of the National Academy of Sciences. Using a stable isotope analysis of carbon and nitrogen to determine the origin of molecules present in hamburgers, chicken, and Fries, Hope Jahren and Rebecca Kraft found corn to be the almost exclusive food source of the beef and chicken served in fast food restaurants. The researchers also uncovered evidence to suggest that fast food restaurants are misleading consumers as to the oils used in preparing French Fries and that animals slaughtered for production are kept in confined quarters, rather than outdoors. ... "Fastfood corporations, although they constitute more than half the restaurants in the U.S. and sell more than 1 hundred billion dollars of food each year, oppose regulation of ingredient reporting," the authors write. If you're any kind of a foodie, or subscribe to the Slow Food movement's belief in "counteracting fast food and fast life, the disappearance of local food traditions, and people's dwindling interest in the food they eat...," you'll wrinkle your nose in disgust at the idea of celebrating fast food. But as much as we shake our fists at fast food, there's something nostalgic -- even downright pleasurable -- about salty fried chicken , hot potato wedges topped with cheese and bacon bits, or a burger stacked between onion rings and drenched in smoky barbeque sauce. And don't even get me started on McDonald's French Fries -- oh, how I can wax poetic about those thin, salty, matchsticks of heaven! My foodie conscience won't let me go near fast food joints too often, but I figured I could satisfy my cravings by making fast food at home -- the slow food way. If the meat is free-range, the buns organic, and the cheese from happy, freely-grazing cows, how bad could it be? I set out to create my favorite treat: the Sausage McMuffin. From Whole Foods , I procured fresh, loose breakfast sausage meat and lovingly formed it into small patties.
