Randolph Murray So how does a 51-year-old Bonaire general construction contractor wind up engineering a cast iron griddle designed specifically for Jalapeno peppers? And get to show off his invention on television? For Kenny Orr, the path to Pepper prominence led from Georgia to Texas and even Alaska before it all came together in Houston County. "I've always loved to cook," says the Air Force veteran who worked in civil engineering at Robins. "My children for years have urged me to open a restaurant." But the amateur chef has pretty much kept to his own kitchen until recently. Some of his favorite dishes involve roasting and stuffing Jalapenoo peppers with all sorts of goodies, from cheeses to seafood and just about everything in between. So the salmonella saintpaul outbreak of 2008 is over. That is what the Centers for Disease Control and Prevention and the Food and Drug Administration just got done telling reporters. Because the illnesses have tapered off and because potentially contaminated Jalapeno and serrano peppers are no longer in circulation in U.S. markets, FDA also lifted its warning against raw Mexican Jalapeno and serrano peppers. It was a bit of an anticlimactic ending to the biggest salmonella outbreak in a decade. No wild pigs to blame--yet. The FDA's field investigation in Mexico is over but the agency is still analyzing what it collected. For now, FDA has no more answers than it had a few weeks ago when it said it had found the outbreak strain in irrigation water and in serrano peppers on a farm in Mexico. One mystery that remains unsolved is whether tomatoes were ever responsible for illness. CDC's Robert Tauxe reiterated that tomatoes may have caused illness in the early days of the outbreak. But he admitted that the only evidence they have to support that is based on interviews with patients who got sick in May, in contrast to Jalapeno and serrano peppers where they confirmed the bacteria's presence in a lab. As of Aug. 20, the tally was 1,434 people sickened in the U.S. and Canada. At least 273 were hospitalized and two people died. It's good to know that federal food safety officials have finally found the smoking Pepper in the nation's worst food-borne illness outbreak in a decade. But the haphazard effort to trace the source of the summer's widespread sickness demonstrates the need for much tougher regulations for tracking potentially tainted produce. Peel peaches, remove pit, and cut into a small dice, 1/4-inch by 1/4-inch, and place in medium bowl. Finely slice white part of green onion plus one inch of the green, add to bowl. Remove seeds and ribs from Jalapeno and finely mince. Add half to all of the minced Jalapeno depending on your desired level of spiciness. Add cilantro, lemon juice, sugar, plus pinch of salt to the medium bowl. Stir all ingredients to combine and set aside. Preheat a large skillet with vegetable oil over medium high heat. Pat pork chops dry with paper towels then season on both sides with salt and Pepper. Add pork chops to pan, cooking for about 3 minutes per side until golden brown and just cooked through. I think my bias towards all things spicy started when I discovered that crushing the big green chili found in sinigang soup makes it more delicious than it already is. From then on, I?ve always made it a point to add something to make my meals spicy---hot sauce, black Pepper, Jalapeno, chili flakes and even minced siling labuyo (red chili). :DAlways select fresh Jalapeno Peppers without blemishes, bright in color, smooth skin, large in size. Prepare peppers by removing stems, washing in cool water, placing in colander to allow drying. Cut in half, length wise. Use a small apple corer to remove all seeds and veins, creating bowls with the peppers. Grate cheese Sizzling Porky Peppers Ingredients: 8 or 10 Jalapeno Peppers 6 to 8 oz. Ground Sausage ( Hot or Mild) 4 oz. grated cheese of choice Salt & Pepper to taste Cooking Oil (Olive, Peanut, Vegetable, etc.) Tortilla chips (Tostitos Brand White Corn Restaurant Style work well) Salsa and Sour Cream (Optional) In medium sized skillet, brown sausage in about a tablespoon of olive oil. Remove from heat and drain. Preheat your Pepper Griddle on the stove (Electric, Gas, or Barbecue grill) to Medium high. Oil the griddle using your choice of oil. Salt peppers, place pork inside peppers and put into preheated griddle for approximately 5 to 7 minutes until peppers have browned. Place peppers on plate of tortilla chips and top with grated cheese. Allow some cooling time before eating. Top with Salsa and Sour Cream for added taste. Don’t forget to refill your griddle with additional peppers. One serving is never enough. To spice’em up, top with grated Pepper Jack or Mexican melting cheese with Jalapeno’s. Pico de Gallo Peppers 10 to 12 Jalapeno peppers (reserve 2 to 3 peppers to be chopped) 4 medium Tomatoes diced and drained 1 medium Onion diced 1 bunch fresh Cilantro chopped 2 medium cloves of Garlic chopped finely Juice of 1 Lemon or Lime Coarse Pepper and Salt to taste Olive Oil (for your griddle) Tortilla chips (I like the Tostitos Brand White Corn Restaurant Style) Mix Tomatoes, Onion, Chopped peppers, Cilantro, Garlic, and seasoning together in medium size bowl; pour Lemon juice on top then set aside. Slice remaining peppers lengthwise creating bowls. Salt and fill liberally with mixture; pre-heat griddle to medium (gas, electric stove, or BBQ grill) then place into oiled griddle for approximately 5 to 7 minutes until peppers have browned.
