We are writing to express our shock and dismay at the decision to locate the Winter Market at ALCO, a Streuver Brothers project in Providence, RI. The same instinct and commitment that leads us to supporting local growers and small farms has also moved us to oppose the pattern of development and displacement caused by developers like the Streuver Brothers. We are greatly saddened to hear this news as people who enjoyed, and shopped frequently at, the market last year. But we cannot legitimate or condone the actions of Streuver Brothers by patronizing any business located on the sites of their damaging development projects. We applaud what seems to be the intention to move this into a neighborhood that has limited access to Healthy Food. However, the intention is diminished by locating this effort on premises that are, on balance, creating more harm than good for the longstanding residents of the area. Cooking Light has picked five Healthy Food trends that you might want to follow. I've heard of most of them, though Flexitarianism is a new term to me, even though I would say many American's follow this without even know it. It's when a person eats a diet that's mostly grains, vegetables, and fruit, with a little meat, fish, poultry, and dairy mixed in too. Functional Foods are foods that are enriched with more nutrients, such as orange juice with calcium. We know what Organic Food, Locally Grown Foods, and Vegetarianism represent, but are you familiar with Slow Food? I first heard this term a few years ago (and there have been books written about it and it's a growing movement). It's choosing locally grown Food, cooking it in traditional ways and then eating it with family, something that a lot of families don't do nowadays. Mandy Zinn is a 1994 graduate of Newton High School who has come back to her alma mater, taking over as the director of Food service of USD 373 on Monday. Though she comes with experience —she left the position of Food service director at Presbyterian Manor — she has a lot to learn. “It’s very different from a retirement facility,” Zinn said. “There you have all different diets to consider, and getting them to eat and not lose weight is a concern.” In the school system, there are other concerns, such as the buzz coming from childhood obesity the last few years. There also are different regulations for Food service in schools than there are in retirement communities. And there are Food issues at school that include federal reimbursements, free and reduced-cost lunch programs, vending machines in the hallways and a summer lunch program. In addition to the school lunch many would remember, the high school offers an ala carte line. That line is full of choices — from baked potato chips to pizza. “We do more than I thought we’d do for choices,” Zinn said. Have you been advised by your Healthy practitioner to CUT SALT from your diet?? Well, take heart - I want to let you know that SALT is a necessary part of eating Healthy nutritious Food . Since the beginning of recorded history, salt was exalted and synonymous with virtue. Salt was so precious and valuable that people actually got paid wages in Salt. And spilling it was considered bad luck! Depending on where salt came from and how it was produced it would vary in color, taste and cleanliness. Then, with the industrial revolution, modern man learned how to chemically clean salt and used high temperatures to purge it. However, these extremely high temperatures removed vital, important minerals that were considered impurities - thus yeilding a pure white sodium chloride . Salt manufacturers also added other chemicals like aluminum hydroxide to prevent caking and then a chemically made iodide (which we are told is necessary nutrient) but it is not usable in a synthetic form...only usable as it's found in nature.
