Basque Country-Style Spaghetti 1/2 pound thin spaghetti 4 tablespoons butter 4 tablespoons olive oil 4 large garlic cloves, chopped 20 medium shrimp, peeled and de-veined 1/4 teaspoon salt 1/2 teaspoon black pepper 3 tablespoons fresh parsley, minced 1/4 cup fresh Parmesan cheese, grated In a large saucepan bring 3 quarts water to a boil. Add spaghetti and cook until tender, but still firm (8 to 10 minutes). Meanwhile, heat butter and olive oil over medium heat in a large skillet. Add garlic, cooking until golden; discard garlic pieces. Add shrimp, salt, pepper, and 2 tablespoons of the parsley to skillet and cook 1 to 3 minutes until shrimp turn pink. Remove saucepan from heat. Drain spaghetti and add to saucepan. Add Parmesan cheese. Place in a warmed serving bowl and sprinkle with remaining 1 tablespoon parsley. Serve immediately. Serves 4. ...

September is peak surf season in western Europe; big waves can extend from Morocco in the south to the West Country and Ireland in the north. Numberous surfing festivals and competitions are on this time of year- the next big one will be in the Basque region of northern Spain . Around late August and early September it gets very busy in the popular surf areas in Spain, Portugal, France..and even Cornwall. The water gets overcrowded by keen surfers, so much so that on days of big swell and clean waves, surf rage  not unheard of. Apparantly there's a surfing etiquette to follow. With a lack of space in the open water due to tourists the locals can get edgy and territorial.. So why is the surf at its best now? Well, in short, hurricane season is at its peak. Low pressure circulations (storms) form on the coast of Africa before sweeping westwards near the US Gulf Coast, eastern Seaboard and Caribbean. En route these systems often strengthen into powerful tropical storms and dangerous hurricanes, before weakening and boomeranging back across the Atlantic to western Europe. The result is huge swell. The combination of this swell and narrow continental shelf (particularly around France and Iberia) means big waves are maintained.
