Before books about Big Organic and the Slow Food movement became all the rage, histories of specific food stuffs (with titles like “The Potato: How the Humble Spud Rescued the Western World” and “Apple: One a Day to Save Your Life”) ruled the charts. Clearly Alton Brown, host of the [...] ...

Tomorrow night at 10PM, Food Network kicks off Alton Brown's latest TV show, Feasting on Waves , where the Mensa-smart kitchen geek and his crew hop into two 50-foot catamarans and sail around 15 different Caribbean islands in search of quality cuisine, shooting and editing the hi-def episodes right there on the boats. It turns out, despite his disdain for specialized kitchen gadgets, Brown depended on regular high-end tech to make a cooking show on a boat happen. How do you produce a TV show from a sailboat? One of the things about the Feasting shows in general is that they have a very small crew, and we are moving with very little space. We are extremely packed and technology dense. We had two 50-foot catamarans—it sounds fun but it wasn’t that fun. So you shoot and edit as you go? This year we decided to go completely tapeless: Panasonic P2 cards on 200s. We’re downloading them into our portable Avid edit system. We take as much audio equipment as we take video equipment. The funny thing is, professional audio hasn’t gotten a whole lot smaller. Although hi-def cameras have gotten smaller, lenses have gotten better and battery time has gotten better, audio is still the tricky part of the process for field reporting. I see you were also using a little Panasonic? I was lucky enough to be one of the first people in the US to get Panasonic’s HDC-HS100 AVCHD camcorder. It’s got a nice little Leica lens on it. We take everything throu ...

Alton Brown of Good Eats fame has a new show airing on Food Network and they’re doing all their HD video editing on location in the Caribbean, usually on a boat. Turns out that he’s a huge gadget/tech fan and Gizmodo has the scoop on the gadgets that Alton likes to use and how they manage to get the show production ready in the field. This year we decided to go completely tapeless: Panasonic P2 cards on 200s. We’re downloading them into our portable Avid edit system. We take as much audio equipment as we take video equipment. I’ve been watching Feasting on Waves. Of course, if you are truly vested in Food Network, you can’t miss it. The rotation on this show is heavy. I think FN should have more experiential programming. Of course, I also love Tony B’s “No Reservations” - another show that gives the viewer a fuller, exotic perspective. Alton Brown’s [...] ...

We've talked about Alton Brown before . The bespectacled host of Food Network's Good Eats has had his ups and downs with his own weight and feelings on fat people. On that BFB post, he spoke incredibly ill of his own body. And if you saw one of his previous Feasting on... specials you may recall his OMG I NEED TO DO SITUPS NOW BECAUSE OF ALL THIS HIGH-CAL HIGH-FAT FOOD routine which became truly old, sad, and upsetting. Unfortunately, Brown has come out of the fat-hating closet for good in a recent interview that got picked up at Ecorazzi. His words: ”I've struggled with weight all my life, and probably always will. But I was on my most recent book tour I was shocked by the number of overweight families,” he says. “People would come up to me and say, ‘Oh, we love the Food Network.’ Well, no (expletive); did you eat the TV? There’s only four of you and you can’t ride in an elevator together. I’ll probably make fat people angry, but we need, as a culture, to be ashamed. It’s not “… healthy.” Angry? Check. I'm angry because it's another case of a food celebrity (Jamie Oliver) trying to shame all of the fat people away. And on top of it, it really seems to be a situation where Brown has had negative body images ("all [his] life" mind you) and when he sees fat people, he's reminded of what he could be... maybe, if his set point is higher than its current spot... and he's afraid of that. So I really do think this comes from a place of fear ...

Alton Brown and his crew left their motorcycles behind for the latest incarnation of the Feasting series, Feasting on Waves. Instead, the guys (plus girl this time!) departed America’s fair shores to explore Caribbean fare, island-hopping on a couple of well-outfited boats. (Or are they ships? Is there a difference? Oh, the questions a nautical show [...] ...
