            <description>&lt;p&gt;&lt;font color="Gray"&gt;Source: food.theplainjane.com --- Wednesday, June 05, 2013&lt;/font&gt;&lt;br /&gt;I was poking around looking at something on in my RSS reader (which currently is Feedly ) and saw a post about Root &lt;b&gt;Beer&lt;/b&gt; cookies. A lot of times I’ll bookmark something and go “yeah, I’ll make that” and never do, but the Root &lt;b&gt;Beer&lt;/b&gt; cookies kind of gnawed at me. Could a cookie really taste sort of like a soda flavor? The “magic” ingredient for these cookies? Root &lt;b&gt;Beer&lt;/b&gt; concentrate. Who knew this was a thing?! You can even make homemade root &lt;b&gt;Beer&lt;/b&gt; with this stuff (which is something I’ll have to do next). I found the root &lt;b&gt;Beer&lt;/b&gt; concentrate at the Wal-Mart grocery store in La Mesa since I hate going to “real” Wal-Marts. Woo! The dough for this one is a bit wet, which surprised me. I thought it would be a stiffer, drier dough (more like chocolate chip cookie dough) but it scooped really well and made it easy to make very uniform cookies with my ice cream scoop. The cookies came out perfectly round and I used my fancy new silicon baking bats to get a lovely, even brown on the bottom. The cookies really don’t need anything else at this point. They are chock full of root &lt;b&gt;Beer&lt;/b&gt; flavor goodness. I saw a few recipes that filled them with root &lt;b&gt;Beer&lt;/b&gt; flavored filling, or put root &lt;b&gt;Beer&lt;/b&gt; frosting on top but it sounded like overkill to me. The root &lt;b&gt;Beer&lt;/b&gt; flavor is prominent and well pronounced in these soft cookies. They have a slight crisp on the edge making them extremely lovely and delicious all at once. It seems like it should, doesn’t it? Although commercial cream sodas are probably made with artificial flavors, “cream soda” flavor is really easy to create with just sugar, lemon, and vanilla. The only out of the ordinary things you’ll need are a vanilla bean (I bought a bunch here for way cheaper than in stores), and a candy thermometer. Cream Soda Syrup (&lt;b&gt;Recipe&lt;/b&gt; adapted slightly from here ) 2 cups white sugar 1 lemon, juiced 1 vanilla bean Seltzer water, for serving Ice, for serving Add sugar to a medium non-reactive saucepan with 1/4 cup water and stir to combine. Cook over medium high heat until a candy thermometer reads 280°F, and the sugar is amber and caramelized. Add 2 cups of room temperature water and the lemon juice to the sugar. The mixture will bubble and splatter, so be careful. Once the mixture calms, stir until smooth. Split the vanilla bean in half, scrape the seeds into the mixture, and add the split bean. Bring mixture to a boil then turn off the heat and let steep for at least 1 hour. Pour syrup through a fine mesh basket strainer into a clean bowl. Discard solids. To serve, pour 1.5 Tablespoons of syrup into a glass with ice. Top off with 8 oz of seltzer water and gently stir. Brought to you by our favorite cheese lover in crime, Jess of How Sweet Eats , this Spicy &lt;b&gt;Beer&lt;/b&gt; Queso with Chorizo and Black Beans dip has our names allllll over it. Get ready to dip and repeat as many times as your body can handle.   What you need: 1/2 pound chorizo 1 large shallot, diced 1 small jalapeño, seeded and diced 1/2 red pepper, diced 2 garlic cloves, minced 1 tablespoon olive oil 1 1/2 cups of your favorite &lt;b&gt;Beer&lt;/b&gt; 1 (8-ounce) block of cream cheese, softened 12 ounces of white cheddar cheese, freshly grated 1 cup of black beans sliced scallions + cilantro for topping   What you do: - Heat a large nonstick skillet over medium heat. Remove any casing from the chorizo and add to the skillet, using a wooden spoon to break apart the sausage until it is in crumbles. - Once it’s cooked, remove with a slotted spoon and place on a paper towel to drain. - Add olive oil, peppers, shallot and garlic with a pinch of salt. Stir well to coat. Let cook until softened, about 5 minutes, stirring occasionally. - Turn the heat up to medium and add &lt;b&gt;Beer&lt;/b&gt;. After a few minutes, stir in softened cream cheese and continue stirring until it’s melted. - Once it is creamy, add in the white cheddar, stirring again until melted and reducing the heat to low. Stir in the black beans and sausage, then remove from heat and serve immediately. Top with scallions and cilantro if desired.   photos an ...&lt;/p&gt;</description>
