| This is for those of us who can eat an occasional banana. It is basically Dottie's Pumpkin Pound Cake with 2 bananas instead of the cup of canned pumpkin. The carb count (using liquid splenda) would be around 72 carbs. You could get 9 nice servings out of this. Banana Almond Cake with Walnuts I made this whole thing in my food processor. 1 1/2 cups almonds or almond flour 2 ripe bananas 1 cup granulated Splenda (or liquid splenda) 1 tsp. vanilla 1/8 tsp. salt 5 eggs 1 tsp. cinnamon 1 tsp. baking powder chopped walnuts (optional) 1/2 cup Preheat oven to 325 and spray a 9 or 8 inch cake pan. Okay..if you are using almonds, then process them in the food processor for about 30-45 seconds until fine and add the other ingredients one by one, incorporating them after adding. Just add the ingredients in the order given. If you are using almond flour to start with, just add the flour/bananas/splenda and incorporate, then add the rest of the ingredients. Mine baked for 25 minutes and was done. If someone was using a bread pan, it would take longer, I'm sure. Cool on a rack and then make some cream cheese frosting of your choice.. Basically: 4 ounces of cream cheese, softened 1/4 cup Splenda or Davinci's SF syrup 1/2 tsp. vanilla Mix frosting and spread on cooled cake..Sprinkle some chopped walnuts on top of the frosting for a nice touch. ... |
